We love a good soup during the holiday season! Something about it is just so cozy. This one is definitely a favorite!! It’s hearty and healthy while still feeling like comfort food. Enjoy!
Ingredients
- 1lb Hot Italian sausage, casings removed
- 1 large yellow onion, chopped
- 2 TBSP Avocado Oil
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 14oz can petit diced tomatoes
- 6 cups chicken broth
- 1 bunch kale, leaves stripped and chopped
- 1 1/2 cups cauliflower rice, cooked
- 3/4 cup heavy whipping cream
- Salt and freshly ground black pepper
- 1/4 cup freshly grated Parmesan, for serving
- Fresh chopped parsley, for serving
Directions
- Add Italian sausage to a pot and cook over medium high heat, breaking up until sausage is browned. Set aside.
- Add onion and avocado oil to the pot and cook, stirring constantly until onions have become translucent, about 2-3 minutes. Add garlic and oregano to the onions and cook for about 30 seconds to lightly brown. Add sausage back to the pot.
- Stir in cauliflower rice, chicken broth and tomatoes; season with salt and pepper, to taste.
- Stir in kale to the soup until wilted, about 3-4 minutes. Stir in heavy cream until heated through, about 1 minute; then adjust seasoning with salt and pepper, to taste. Serve immediately with fresh grated Parmesan and parsley
